recipe for Turkish dolma (stuffed grape leaves)
- Ingredients.
- 1 pound of fresh, drained, and rinsed grape leaves
- 1 cup of white long-grain rice, drained and rinsed
- 1 cup chopped mint, 1/4 cup chopped onion, and 1/2 cup chopped parsley
- Pine nuts, 14 cups
- Olive oil, 1/4 cup
- Lemon juice, 1/4 cup
- Black pepper and one teaspoon of salt

1 Rice, onion, parsley, mint, pine nuts, olive oil, lemon juice, salt, and pepper should all be combined in a big bowl. Mix thoroughly.
2 A grape leaf should be placed stem end down on a flat surface. Put a generous teaspoon of the filling in the leaf's center.
3 Fold the sides of the leaf in after folding the bottom over the filling. Starting from the bottom, tightly roll the leaf up.
4 With the remaining grape leaves and filling, repeat steps 2-3.
5 The dolmas should be arranged in a single layer in a big pot or Dutch oven.
6 Fill the pot with water until the sides of the dolmas are halfway up.
7 Boil the water, then turn the heat down to low and simmer it for 30 to 40 minutes.
8 Warm the dolmas before serving them out of the pot.
- Tips:
- Use frozen or canned grape leaves instead of fresh ones if you can't find any. Just remember to drain or defrost them first before using
- Walnuts or almonds can be used in place of pine nuts if you don't have any.
- The filling can also include additional items such as diced tomatoes, zucchini, or chopped aubergine.
- Dolma can be offered as an appetizer or as a main course.
