Let's start with a traditional cream of chicken soup recipe

1        Components:
  •  One entire chicken or two boneless, skinless breasts
  • Quarts of chicken stock
  • 1 cup of thick cream
  • Twice as much unsalted butter
  • One medium onion cut finely
  • two minced garlic cloves
  • Two chopped and peeled carrots
  • two chopped celery stalks
  • One cup of sliced mushrooms, if desired
  • 1/4 cup flour for all purposes
  • Add pepper and salt to taste.
  • Chop some fresh parsley for garnish.

  • Start with preparing the chicken. Should you choose to use skinless, boneless breasts? you can choose to cook it in a skillet with oil until the centre is no longer pink. or you cook chicken in a big pot of water until it's cooked, then shred the meat after removing it from the bones.


  • Melt the butter in a big pot over a medium heat. Add the chopped onion and simmer for 3–4 minutes, or until it becomes transparent. Add the garlic and heat for a further one minute.


  • To the pot, add the chopped celery, carrots, and mushrooms (if using). After about five minutes, or until the vegetables soften, sauté    

  • To make a roux, sprinkle the flour over the vegetables and mix. Cook, stirring, for a few minutes to prevent lumps.


  • Stirring to mix it into the roux, pour in the chicken broth. The mixture should boil for 10 to 15 minutes, depending on how tender you like your vegetables.


  • Pour the heavy cream into the pot along with the cooked and shredded chicken. Be careful not to bring the soup to a boil again after cooking it.

  • To taste, adjust the amount of salt and pepper added to the soup. For extra flavour, you can also add a pinch of dried or fresh thyme.

  • Spoon the soup into bowls, top with fresh chopped parsley, and serve warm. Savour the traditional cream of chicken soup!
