- To make a roux, sprinkle the flour over the vegetables and mix. Cook, stirring, for a few minutes to prevent lumps.
- Stirring to mix it into the roux, pour in the chicken broth. The mixture should boil for 10 to 15 minutes, depending on how tender you like your vegetables.
- Pour the heavy cream into the pot along with the cooked and shredded chicken. Be careful not to bring the soup to a boil again after cooking it.
- To taste, adjust the amount of salt and pepper added to the soup. For extra flavour, you can also add a pinch of dried or fresh thyme.
